IR heating-based processing technologies have emerged as a new food processing method for enhancing food quality and safety, improving energy and processing efficiency, reducing water usage and wastewater generation. Through systematic research, our research team has been making continuous effort in (1) broadening the understanding of IR heating for food processing, (2) bridging the knowledge gaps on infrared heating and its applications, and (3) translating fundamental research findings to food processes, including drying, blanching, peeling, roasting, and safety improvement.
